First Week Success!


First week of new healthy eating plan and I have to say it was a very successful week. I lost 5.5 lbs this week! I am fully determined and have not let anyone or anything get me off track. I prepared meals at the beginning of the week to get me set up and I make sure I walk for at least 15 minutes once a day.

It's been hard sometimes to stay away, but I find that when I think I want something sweet or a glass of wine, I have to breath and think of the end goal. I also have an iced coffee black no sugar. Or some green tea. It seems to take away the cravings.

The weather has been gorgeous so I've been making plans that include walking as much as possible, carrying my 13lb son around doesn't hurt either!

Stop Wishing, Start Doing!



I have decided that it's enough with the excuses to lose weight. Yes I did just have a baby but that was 3 months ago and I can see how easy it can be to use that as an excuse to stay heavy. I don't want to feel this way. I want to keep up with my little one and be able to play with him. So that means cutting the crap (literally) and getting in shape and healthy.
Before my wedding I tried a diet by Bob Harper called The Skinny Rules. It was simple rules to follow. And it made sense. I wound up losing a lot of weight, clearing my skin, and overall feeling fantastic. So I have decided to give it another go. I know the first 2 weeks will be tough as you can't drink alcohol :( and you completely eliminate processed sugar. But I guess that's a good thing.


So I finally decided to start on a Saturday because I always start on a Monday and I wanted to "shake it up". Here is how the first day went. I'll keep you all updated throughout the process.

Day one:

I woke up early and started off with a full glass of water. I then made breakfast which was 3 egg whites and 1 whole egg and a slice of whole wheat bread. Before I ate breakfast I have another full glass of water.

I then went for a walk with my best friend and our children.

Snack time is an apple and a cheese stick (love that I can eat cheese)

Lunch time consists of turkey meatballs and butternut squash on the side. Of course before eating, another full glass of water.

Snack was another apple and a cheese stick.

Dinner. A big salad with crab cakes.

Drank lots of water all day so it helped keep me full. I never felt hungry or stuffed. Just satisfied which is nice!

The End of Summer Approaches


Can we get that end of summer feeling back? The sadness of summer camp ending and the anticipation of the first day of school, seeing all my friends for the first time since summer started. Fairs and Festivals.  Back to school shopping! (buying new clothes for work doesn't have the same excitement). The last beach days and BBQ's by the pool.




I mean there are still the pumpkin lattes and apple pies to look forward to. Pumpkin picking and Halloween. Trips to the wineries. The smells and colors of fall approaching. Leaves changing to beautiful reds, oranges and yellows. The cool night air and warm apple cider. Fall fashion, the boots and sweaters. Plaid skirts with knee highs. Dark nails and lips. And a fading tan.



I feel like it was just yesterday that I was walking around campus at college checking out all the people. Fall semester was always my favorite. The college I went to has a lot of old buildings and lots of beautiful trees so it was always a magical place to be.

As most of us adults are working the typical 9-5 grind, we come home make dinner, watch tv and go to bed. We don't play anymore. We don't enjoy the moments. We wish for the weekends to come but we are wishing away our lives. We need to stop and enjoy what we have and really appreciate every second of every day!

Monday Inspiration

Mondays are hard to face sometimes, especially after I had such a wonderful weekend with my little potato :)  But I find that sometimes I can look at a picture to inspire me to stay positive. Pictures have a way of bringing a certain feeling and taking us to a place where we have good memories. So here are some of my favorite pictures for this Monday.

Tropical Fish

I have been trying to get back on track with eating healthy and getting back on the exercise bandwagon. So for dinner I decided to try something new and I wanted to share it with you all. (I promise it tastes better than it looks)


First of all I am obsessed with coconut oil!! It is the best product out there as far as I am concerned. 

This is a healthy dinner and so easy to make. I will call it tropical fish. I used tilapia fillet.

First you take a few tablespoons of coconut oil. (enough to coat the pan)

Season the tilapia fillet with pepper and garlic powder (you can use salt too, but I didn't use any) then place in the hot oil.


Now for the "special ingredient" Simply Lemonade with Mango juice! I put approximately 3 tablespoons in the pan with the fish and covered to let steam (keeps the fish very moist)

Cook for about 3-5 mins on each side (depends on how thick the fillet is)

Then serve with your favorite side. I made brussel sprouts, which I also mixed with coconut oil, garlic power and pepper, and roasted in the oven at 400 degrees for about 10 mins. They also came out delicious!

Colors


Yesterday was my last day on my maternity leave. We decided to do something special and went for a nice walk around the Old Westbury Mansion and Botanical Gardens. 



As we walked and took in all the beautiful foliage, I started to see things differently. Everything was more colorful and vibrant with my little one in my life. There was a peace that came over me and a realization about my life. Things were going to be different now. I can see things in color whereas before everything was black and white. I am not afraid anymore to take chances and do the things I was meant to do.
