Popcorn Popcorn

I am obsessed with kettle corn. There used to be a kettle corn truck near our house here on the island. They had the most magnificent kettle corn, but they disappeared never to be seen again. There lied the problem. I was without my beloved kettle corn. 

One day, my husband and I had a brilliant idea! We will make our own kettle corn! So here is the recipe, after much trial and error, it is pretty damn good!!


So we start with some coconut oil, approximately 5 tablespoons (i found this brand at TJ Max)
Next you need 1/3 cup of sugar and 1/2 cup of popcorn kernels.
Heat the oil evenly (medium/high heat)

Pour in the popcorn 

Then pour the sugar in to coat the kernels
Carefully stir the sugar and the kernels together, making sure to combine the sugar and kernels

Next cover and shake over the heat until all the kernels pop! (you will hear the pooping slow down) **Its important to shake as they pop so all the kernels can pop!

Remove from the heat and place onto a cookie sheet or in a bowl (need to remove from pot as they will continue to cook in the heat and burn)
Put your favorite movie or TV show on and ENJOY!!!

Just a walk in the park


Its been a lazy past few days as my maternity leave is dwindling down, and I am trying to enjoy every moment with my son, as soon I will be back at work. For those you who are also mothers, you know how fabulous it is to have a little one in your life. I commend all the working moms out there, I know this will be a very tough transition. Especially with this little one waiting at home for me.

Someone likes their new sunglasses. The weather has been beautiful here in New York and after our horrible winter, I want to take full advantage of the sun.

This morning we took a leisurely walk to get some coffee and breakfast.Then went for a walk in the park and stumbled upon a rose garden.

Why not?

As I sat on my couch this morning, sipping my coffee, I couldn't help but think of an article I recently read about how we choose to dress and how we are judged by people based on it. This is something that stuck with me since it is something that I have and continue to go through on a daily basis. The writer talks about how she embraces her body and dresses in a way that makes her happy, no matter what others may think. It also spoke about how we all judge each other too much and although the way we dress reflects our personality, it is not all that we are. You can read the article Here 

During my entire pregnancy, until literally the day I gave birth at 37 and 1/2 weeks, I wore my high heels. Every single day, I would have to hear, "OMG I cannot believe you are wearing heels! You are going to lose your balance! You are going to hurt yourself! You are crazy!" Well, I say to them "Why not?" 

I have been the subject of judgement quite a bit in my lifetime. I like to dress to make myself feel good. I find that when I feel good about myself then I feel good about everything. Why is it that we feel the need to judge each other to harshly? Is it really jealousy? Does it really make an insecure person feel better about themselves? I am not so sure this is the only answer. Whether people like it or not I will not compromise who I am for anyone. 

I know this sounds like a negative post, but I like to look at it as positive. The article I read and my post are meant to empower women to be themselves and have fun with fashion. Embrace your body and love yourself.
